Description | Amylopectin (stained red by iodine) replaces amylose (blue staining) in endosperm and pollen; extensive allelic series; application: highly branched starch has gelling properties, used for food gels, adhesives, and other industrial purposes; SSRs phi022, 027, 061. Opaque endosperm of smooth, firm non- corneous starch, consisting almost entirely of amylopectin (stains red with iodine), which replaces amylose (blue staining) in endosperm, and also in the pollen and embryo sac. Opaqueness not apparent until dry. Encodes starch-granule- bound nucleotide diphosphate-starch glucosyl transferase (Nelson and Rines 1962). Transposon mutants Ac, Ds, En/Spm, dSpm and Mu.
